Kathy's Most Requested Holiday Recipe
Kathy's Shrimp Feta Mint Lime Appetizer
3/4 cup extra virgin olive oil
3 Tbs, chopped fresh mint
juice of 3-4 limes
1/2 teaspoon of salt
1/2 teaspoon of pepper
4 ounces of crumbled feta cheese
1 pound of cooked, peeled, de-veined shrimp with tails on
Combine olive oil, lime juice, feta, mint, salt and pepper in a large bowl and mix well. Cook, peel and drain shrimp very well or thaw pre-cooked shrimp and drain very well. Add shrimp to vinaigrette and mix gently. Marinate covered in the refrigerator for 2 hours. Serve and garnish with slices of lime and mint sprigs.
